Egg and Ham Cups

From The Simple Delights

12 Eggs
12 slices of ham ( I used the really cheap stuff)
1/2 Cup of Parmesan cheeses (for the top)3 green onions sliced
Salt & Pepper

Preheat the oven to 400. Spray a muffin tin with cooking spray.  Place a slice of ham in each hole making a ham cup. Crack one egg into each muffin tin hole and sprinkle with salt and pepper.

I like my eggs a little more well done. so I baked them for about 10 minutes the turned the broiler on high for 2 minutes.


Remove from muffin tin and sprinkle with parmesan cheese and green onions.

  1. Aw, you totally need to photograph what it looks like when you cut into it - I'm dying to know! :) I don't even like runny eggs (I'm a scrambled egg girl), but this sounds so interesting!

    1. They are baked all the way through. I even did some with out yolk because I don't really like yolk my bff made them and posted a picture of the inside http://clutteredcupcake.blogspot.com/2012/01/breakfast-time.html . Let me know if you try them.
