Egg and Ham Cups

From The Simple Delights

12 Eggs
12 slices of ham ( I used the really cheap stuff)
1/2 Cup of Parmesan cheeses (for the top)3 green onions sliced
Salt & Pepper

Preheat the oven to 400. Spray a muffin tin with cooking spray.  Place a slice of ham in each hole making a ham cup. Crack one egg into each muffin tin hole and sprinkle with salt and pepper.

I like my eggs a little more well done. so I baked them for about 10 minutes the turned the broiler on high for 2 minutes.


Remove from muffin tin and sprinkle with parmesan cheese and green onions.

Two Layered dips

If you're not sure what to make for super bowl this weekend try one or both of these, guaranteed hit. This is a reblog from my original blog, I figured since the superbowl is bascially a repeat I can repeat a post... Wish the SF 49ers would have made it (that's me whining).

On the left:
1 can of refried beans
2 avocados (you can buy the already smooshed avo at TJ's)
8 oz container jazzed up Sour Cream
1/2 jar of TJ's salsa autentica
1 cup shredded cheddar
1 small container sliced olives


On the right:
1 jar TJ's fat free black bean dip
2 avocados (you can buy the already smooshed avo at TJ's)
8 oz container jazzed up Sour Cream
1/2 jar of TJ's salsa autentica
1 cup shredded cheddar
1/2 c sliced jalapenos


Jazzed up Sour Cream

For use in dips, tacos, tostadas or as dip it self.

16oz container of Sour Cream
2 to 3 Tablespoons of your favorite hot sauce ( I used Tapatio)
1 Tablespoon Galric Powder
1 Tablespoon of Ground Cumin

Mix and and use!
